Tasting Notes
•This wine is clear and pale gold in color. It boasts fruit forward aromas of pear, stone fruit, pineapple along with hints of honeysuckle and jasmine. The mouthfeel is bright and medium bodied with saline minerality. Clean apricot and subtle ginger spice flavors with crisp Meyer Lemon, chamomile, honey and Fuji apple.

The Story
The varietals that comprise the Rhone Wolf White Wine were carefully selected from multiple vineyards in El Dorado and Calaveras Counties. Each variety was harvested at its ideal ripeness to create a Rhône-inspired white blend, allowing for optimal sugar accumulation and flavor maturity while preserving the bright acidity that provides the wine's structure and freshness.
Because each variety reached peak ripeness at different times, the grapes were harvested and brought to the winery separately. Every lot was gently whole-cluster pressed to minimize seed breakage and avoid the extraction of unwanted tannins. Each varietal was then fermented independently in temperature-controlled stainless steel tanks using carefully selected yeast strains to enhance complexity while balancing minerality and vibrant fruit character. Once fermentation was complete, the wines were blended to achieve the ideal expression of each variety. Prior to bottling, the finished blend was held at cool temperatures to preserve its freshness and aromatic vibrancy.
